I originally found this recipe on Pinterest, but here's my version:
What you will need:
- One avocado
- Handful of cherry tomatoes
- Lunch Meat
- Lettuce
- Tortilla (I used a whole wheat tortilla)
- Mash up your avocado, and add chopped tomatoes to it. You could always add salt and pepper for seasoning.
- Assemble on half of the tortilla the avocado/tomato mix, pieces of lettuce and pieces of lunch meat. Layer together and fold over the other side of the tortilla
- Using a frying pan, cook on medium heat until tortilla is crispy.
This was such an easy, filling, and fairly healthy recipe. It certainly made for a great lunch the next day too!
