Healthy Quesadillas

I have loved making all my own meals this month. One of the best recipes I have found is for Avocado Quesadillas! They have all the taste of a cheesy quesadilla, but are quite a bit healthier for you.

I originally found this recipe on Pinterest, but here's my version:

What you will need:
  • One avocado
  • Handful of cherry tomatoes
  • Lunch Meat
  • Lettuce
  • Tortilla (I used a whole wheat tortilla)


  1. Mash up your avocado, and add chopped tomatoes to it. You could always add salt and pepper for seasoning. 
  2. Assemble on half of the tortilla the avocado/tomato mix, pieces of lettuce and pieces of lunch meat. Layer together and fold over the other side of the tortilla
  3. Using a frying pan, cook on medium heat until tortilla is crispy.

This was such an easy, filling, and fairly healthy recipe. It certainly made for a great lunch the next day too!

Always a craft going on...

It's Caitlin, back at crafting again!!

Since moving in to our townhouse on campus, I have loved finding things to decorate with. One of my favorite things to do is to create the art to make a space inviting.

And somehow, I've been in luck these last two weeks, I have found some good deals and allowed my creative juices to flow!!

I have been struggling to find curtains that weren't black-out curtains, didn't break the bank, and provided enough color to color a space. And voila! I found them.
My secret??
They are actually scarves. Three different sheer scarves I found on sale in our campus bookstore for four dollars each. Whoop!! I'd say it was a pretty lucky find, and somehow they fit perfectly. There is a scarf on each side of the window, then one that crosses over the top of the window.


My other details to add color??
Paint chips!!
Paint chips are awesome to add color, and when I moved in, I was desperate to find more color. I love splashes of the bright and bold, and paint chips were perfect!
Since paint chips are free, I cut them in to strips and strung them on some twine.




Another quick and easy craft in my room was the clothesline of pictures. I uses command hooks to string up some twine  with mini clothespins for the pictures. Not too bad!


My last two projects from my room include a snazzy magnetic chalk board and an earring holder.

For the chalkboard, I bought an 89 cent cookie pan at Wal-Mart, covered it with $3 Chalkboard paint from Target, and stuck on some magnets! Now if I could only find the chalk...

The last project was one I made two years ago. I took a cheap embroidery hoop with some scraps of lace and wrapped it around the inner loop of the embroidery hoop. Tied it off with some ribbon and it created a decorative and useful piece!

A Snowy Post

Hello! Happy New Year!!

Any wishes or goals for 2015??

One of my biggest resolutions is to take time to slow down and enjoy every moment. Connect with others, take time for conversation, and try not to get too caught up thinking about the future, especially after graduation.

I have a feeling it's going to be a terrific year!!

This January, I am finishing up the last of my student teaching back in Iowa! It is good to be back on campus, and even though we have had just in this last week, one two-hour early dismissal, one two-hour late start, and no school for a freeze day, it certainly is beautiful.

So thus...a very snowy post with many snowy pictures!!
